fix(hosted): persist calendar OAuth state to Netlify Blobs (INF-KN-3b)

Calendar connectors and encrypted refresh tokens were stored only on ephemeral /tmp DATA_DIR — cold starts lost connections and sync failed with hub errors.

Also stop gateway proxyTo from following OAuth 302 redirects (which inlined Scooling HTML on api.knowtation.store instead of redirecting the browser).
