docs: replace rsync deploy with push.sh (Docker + ECR + SSM)
rsync + ssh is no longer the deploy mechanism. Deploys now use deploy/push.sh which builds a linux/amd64 Docker image, pushes to ECR, and triggers a zero-downtime blue-green swap via AWS SSM.
